I love this baked chicken and feta recipe because the chicken is incredibly juicy and flavorful. It has a light, fresh taste, and the feta cheese enhances the Greek flavors.

You’ll surely enjoy this dish, and it pairs wonderfully with our high-protein pasta salad recipe. It’s a delicious and nutritious combination that’s perfect for any meal!

The bonus is this recipe is so easy to make! I make it at least once a week and pair it with the pasta, roasted potatoes, or rice. It pairs well with everything!

Ingredients

  • I highly recommend using boneless, skinless chicken breast. Most people find this type of chicken is dry, but I can assure you it is VERY moist and juicy the way I teach you to bake it!
  • Minced garlic; I use the kind that comes in a big bottle! It’s so easy and you can use it in any recipe.
  • I like lemon juice from the bottle as well because it stays fresh in the refrigerator for a long time.
  • Chicken broth helps to keep the chicken juicy while it’s baking.
  • Feta cheese, I use the type that is dry and pre-crumbled as I find it a bit easier to manage and prep.

Storage

You can store this in the fridge for 2-3 days after you bake it as long as you throw it in the fridge after cooking. Store in a tightly sealed container!

Substitutions & Additions

  • You can swap out the boneless, skinless chicken breast for chicken thighs. They tend to be a little less expensive and bake really well in chicken broth. I find them a little too much work to eat so I tend to skip.
  • Any kind of feta cheese will work for this recipe. If you want to buy feta cheese in brine it will have more moisture to it which is delicious!
  • You can use any type of garlic you want, fresh or minced works perfectly. If you’re using fresh garlic I would use 3 pieces of fresh garlic and chop it up into small pieces.
  • Fresh lemons work well with this recipe as well! I would squeeze the lemon juice of half a lemon into the mixture. Just make sure to check for lemon seeds as they sometimes drop in when you’re squeezing it.
  • If you don’t have chicken broth on hand you can use vegetable broth as well.
  • You can use any type of baking dish that you want for this recipe. I used an 8 inch baking loaf pan to keep the flavours in a smaller container. But if you’re making a larger batch you can use a larger pan!

Ingredients
  

Chicken Marinade

  • 1/2 Tsp Lemon Juice
  • 2 Tsp Minced Garlic
  • 1 Tsp Oregano
  • 1 Tsp Paprika
  • 1/2 Tsp Salt
  • 1/4 Tsp Black pepper
  • 1/4 Cup Olive Oil

Other

  • 1 Pound Chicken Breast
  • 1/3 Cup Feta Cheese Crumbled
  • 1/4 Cup Chicken Broth

Instructions
 

  • Preheat your oven to 400 Degrees Farenheit.
  • Take your chicken breast and slice it into chicken strips. They should be uniform in size.
  • Mix together all marinade ingredients into a bowl.
  • Add the chicken breast strips into the bowl and toss to coat each piece.
  • Put the bowl in the fridge and marinade for 30-60 minutes. This step is optional! You can proceed to the next step if you don't want to refrigerate.
  • I prefer to line an oven safe dish for baking with tinfoil, it makes for an easy clean up. But all you need is an oven safe dish.
  • Place the marinated chicken breast strips into the oven safe dish, and pour the chicken broth around the chicken. Top with 1/2 of the feta cheese.
  • Bake for 20 minutes. Baking time will vary slightly based on your oven, how thick your chicken is and how much you have made.
  • When it is done baking, top with the remaining feta cheese and serve!

Notes

  • Marinating the chicken breast in the sauce will enhance the flavour and make it juicier! I don’t recommend marinating for longer than 2 hours.  
  • If you want more flavour to the chicken, you can double the herbs in the mixture.
  • Try not to pour the chicken broth directly on the chicken when placing it in the baking dish as this will ‘wash away’ the herbs that are coating the chicken.  Pour around the chicken.  This will help to keep the chicken juicy.
  • You can double or triple this recipe to make more!
  • I used an 8 inch baking loaf pan for this recipe!  If you’re making a larger batch you can use any type of baking dish that you like.  Just try not to have one too large as you want the flavours to not get watered down with using too much chicken broth.
